Snacks can have many benefits when the right foods are used.  Healthy snacks such as fresh fruit and vegetables can provide the energy to power the body through the day. In addition to providing energy, snacking can decrease cravings and assist with minimizing weight gain.  Try one of our favorites! This deliciously, healthy snack recipe for Edamame Hummus!  Enjoy and remember snacking is good for you!
Edamame Hummus
Serves 4

1 ½ cups frozen shelled edamame
¼ cup tahini paste, stirred well
¼ cup water
½ teaspoon lemon zest
Juice of 1 lemon
1 teaspoon salt
1 garlic clove, minced
½ teaspoon cumin
Pinch of cayenne pepper
4 tablespoons extra virgin olive oil
2 tablespoons cilantro, chopped

Defrost the edamame in the refrigerator overnight or microwave for 1-2 minutes.

Puree the edamame, tahini, water, lemon zest and juice, salt, garlic, cumin and cayenne in the bowl of a food processor until well combined. While the processor is running, stream in 3 tablespoons of olive oil and mix until smooth.

Transfer to a serving bowl and fold in the cilantro. Drizzle with remaining extra virgin olive oil before serving and garnish with a few edamame. Serve with assorted raw vegetables.
