The kids are back to school and coming home starving…what are you going to do?!
After school snacks should provide nutrition and energy while tasting great. They also should not take long to make. But don’t sweat, About the Table has 5 easy after school snack ideas that will bring a smile to everyone’s faces and fill those hungry bellies!

1. BYOT – Build Your Own Toast!

 Toast contains carbohydrates, varying amounts of fiber, and starch which is a great source of energy. Combine the right type of bread with a healthy food and enjoy!
Start with toasted, whole wheat or ezekiel slice, top with nut or sunflower butter and fruit! Almond butter, peanut butter and bananas or mixed berries are other great options. Don’t forget about mashed avocado topped with tomatoes or a poached egg for fun!

2. Smoothies

This snack is one of our favorite ways to sneak in a handful of spinach or other veggies like kale, collards, or lettuce without the kids noticing! These greens are full of nutrients which experience enhanced absorption when consumed this way.  Smoothies are also great for increasing energy as well.
Any mix of fruit or veggies with ice, greek yogurt or almond milk! If you need a little smoothie inspiration, we can add on any prepackaged smoothie ingredients to your next service! Frozen fruit and veggies individually packaged ready for you to blend! Just add, yogurt, almond milk or water!

3. Pizza Rice Cake

Rice cakes are filling but fat free and full of nutritious benefits like fiber and carbohydrates since they are typically made from brown rice.
Take your favorite rice cake (I love these) and top with your favorite marinara and shredded mozzarella or Italian cheese blend! I like to pop mine in my air fryer or toaster oven for a few minutes to slightly melt the cheese.  Who needs delivery?!

4. Greek Yogurt Ranch Dip

This nutrient packed snack while filling, has a higher amount of protein which provides energy, potassium, and fiber.
Take an individual container of your favorite plain greek yogurt and spruce it up with 1/4 tsp celery seed, 1/4 tsp dried dill, 1/4 tsp onion powder, 1/4 tsp garlic powder and salt and pepper to taste. Let it sit for a few minutes for the flavors to combine. Eat with any veggies – carrots, cukes, cherry tomatoes! Sky is the limit.

5. FROYO – Frozen Yogurt

Dessert before dinner? YES PLEASE. Fulfilling and yummy!!

Take 4 cups of any frozen fruit – bananas, strawberries, mango, place in bowl of food processor with 1/2 cup plain greek yogurt, and 2-3 squirts of agave or honey. Process for 3-5 minutes. Eat immediately or freeze for later deliciousness! Don’t forget to top with your favorite toppings – dark chocolate chips, peanut butter, toasted coconut or nuts!
