As the days get longer and the temperatures start to rise, it can be challenging to get creative in the kitchen. This is especially the case when you’re planning a menu for your pint-sized diners.

Thankfully, there are lots of summer-friendly foods that don’t just taste great, but are also kid-approved! Today, we’re sharing a few of our favorite go-to choices.

 Veggie Pizzas

There’s nothing like the fresh taste of summer produce, but it’s not always easy to get little ones to eat their veggies. Whole-wheat tortilla pizzas can make them a little more fun!

Start with a large tortilla, and spread plain cream cheese on top. Then, add different veggies to create a face. You can use cherry tomatoes for the eyes, broccoli florets for the ears, and pepper strips for the nose and mouth. Don’t forget to top each face with plenty of carrot stick “hair”!

 Fresh Fruit Popsicles

We all love a good frozen treat when it’s sweltering outside, and kids are no exception. Instead of loading up on boxes from the grocery store, you can make your own healthier version at home with just a few ingredients!

Start by finely chopping some of your child’s favorite fruits, such as kiwis, strawberries, blueberries, or apples. Then, pour in a little juice or lemonade until the liquid reaches the top of the popsicle mold.

Freeze for at least five hours or overnight for a delicious, refreshing treat!

Peanut Butter and Banana Smoothies

As they swim, splash, and play the summer away, kids need lots of energy. This simple smoothie is packed with protein and potassium and comes together in minutes.

Into a blender, add two frozen bananas, two cups of milk, and ½ cup of peanut butter.

Drizzle in a little honey to taste, and two cups of ice cubes. The result is a creamy snack that’s better than any milkshake you can buy.

Colorful Pasta Salad

Kids love bright colors and different shapes. If you’re tired of the usual weeknight spaghetti, why not up your pasta game with a bold, colorful pasta salad instead?

Stir together one cup of cooked farfalle pasta, along with ¼ cup of fresh peas. Add one diced carrot, peeled and diced cucumber and red pepper (about ¼ cup each), and ¼ cup whole-kernel corn.

For the dressing, keep things light and palate-pleasing by mixing one tablespoon of extra-virgin olive oil with two tablespoons of lemon juice and ½ teaspoon of salt.

 Take the Stress Out of Summer Meals

Summer is your time to relax and enjoy life at a slower pace. You shouldn’t have to stress about meal planning or spend hours in the kitchen.
